Quick, tasty & nutritious pancakes in a snap!

These are soooo simple to make, yet delicious and good for you.

Easy Banana Pancakes
Take a large banana and mash it up in a bowl. Beat two eggs into the banana mixture. Lightly spray a skillet on medium low. Pour in the mixture and cook the pancake, slow and steady, until it is browned on both sides. This may take a few minutes longer than normal pancakes with flour. Turn it slowly. Serve with maple syrup. Enjoy!

*You can add cinnamon, a tiny pinch of nutmeg, and/or a few drops of pure vanilla extract for extra flavor. If you’re a peanut butter lover, add a tablespoon of peanut butter into the pancake mix. I love having these pancakes for lunch or in place of my morning protein shake (by adding my Shaklee protein powder to the banana pancake mixture).
