Monster Bites – Protein packed cookie recipe

Luna's Living Kitchen Monster bites Eva's recipe

This summer, I fell in love with Luna’s Living Kitchen in Charlotte, NC.  This eatery is vegan, and the food is completely fresh, raw, and so, so yummy!

Tonight, I wanted to share my version of Luna’s Living Kitchen raw Monster Bite cookies with my loving Charlotte Shaklee team during our team meeting.

Here is the recipe:

  • 2 cups of Almonds (or almond meal)
  • 14 dried Dates
  • 1 cup of Sunflower Seeds
  • 2-3 tablespoons of Coconut Oil
  • 3 tablespoons of Honey
  • 1/2 cup of dried Cranberries
  • 1/2 cup of Cacao Nibs or Dark Chocolate
  • 1 teaspoon of Cinnamon
  • 1/2 teaspoon of Nutmeg
  • 1/4 teaspoon of Salt

Combine all ingredients into a food processor until mixture holds together.  Ingredients should be finely processed.  Use a 1 inch cookie dough scoop or a tablespoon to portion cookies.  Press into rounds.  Chill for 30 min – 1 hour.

My family likes to eat them straight from the refrigerator.
