In my quest to lose 10 inches, I am making sure to eat as many whole foods as I can throughout the day along with my Shaklee. I love eating salads! But, I don’t always like making them. I usually think the best salads are made by other people!
Well today, I’d like share an easy to prepare Superfood Salad that you can whip up in less than 2 – 3 minutes! We make this salad often, so we try to keep the ingredients in our refrigerator as often as we can.
Not sure what Superfoods are? Superfoods are foods found in nature. They have high nutrient values and are low in calories, and they are incredible sources of anti-oxidants and essential nutrients – nutrients we need but cannot make ourselves. Incorporating superfoods into your daily diet can make a HUGE impact on your health! After eating this salad, I always feel so good. Lots of energy, clear thinking and no hunger pains. So Satisfying Superfood Salad
3 cups of kale (Don’t be afraid to eat it raw! It has a very slight broccoli taste, and it isn’t bitter!)
1/3 cup of walnuts (at least 14 walnut halves) – leave out if you have a nut allergy and just use the seeds
1/4 cup of organic, Non-GMO soy beans (Edamame)
1/2 cup of blueberries
1/2 cup of sliced cucumbers
2 tablespoons of dried cranberries (Dried cherries are good, too.)
2 tablespoons of raw sunflower seeds
1/4 cup of alfalfa sprouts (I use a mix of alfalfa and radish sprouts.)
1 tablespoon of almond oil (or use balsamic vinegar and Extra Virgin olive oil)
1/2 of a fresh lemon
Place all ingredients in a bowl on or on a plate. Drizzle almond oil and fresh lemon juice over the salad. Be sure to drink a tall glass of water with lemon or cucumber, too!
